Ingredients:
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 1 large egg
- 1 egg yolk
- 1 tsp vanilla extract
- 2 tbsp red food coloring
- 1/4 cup unsweetened cocoa powder
- 1 cup all-purpose flour
- 1/4 tsp baking soda
- 1/4 tsp salt
- 2 tbsp sour cream
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 2 tbsp heavy cream
Instructions:
- Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides, and preheat the oven to 350°F (175°C).
- Whisk the melted butter and granulated sugar together until combined and the mixture looks like wet sand.
- Beat in the egg and egg yolk until the mixture is glossy and smooth.
- Stir in the red food coloring and vanilla extract until the color is uniform and vibrant.
- Sift in the cocoa powder, all-purpose flour, baking soda, and salt. Gently fold the mixture with a spatula, avoiding overmixing, until no streaks of flour remain.
- Fold in the sour cream until just incorporated.
- Spread the batter evenly into the prepared pan and bake for 22-25 minutes, or until the edges are set and slightly pulling away from the sides.
- Prepare the frosting by beating together softened cream cheese, softened butter, powdered sugar, vanilla extract, and heavy cream until silky.
- Once brownies have cooled completely, spread the cream cheese frosting evenly over the top.
