Ingredients:

  • 1/4 cup unsweetened cocoa powder

  • 1/4 tsp salt
  • 2 tbsp sour cream
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream

Instructions:

  1. Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides, and preheat the oven to 350°F (175°C).
  2. Whisk the melted butter and granulated sugar together until combined and the mixture looks like wet sand.
  3. Beat in the egg and egg yolk until the mixture is glossy and smooth.
  4. Stir in the red food coloring and vanilla extract until the color is uniform and vibrant.
  5. Sift in the cocoa powder, all-purpose flour, baking soda, and salt. Gently fold the mixture with a spatula, avoiding overmixing, until no streaks of flour remain.
  6. Fold in the sour cream until just incorporated.
  7. Spread the batter evenly into the prepared pan and bake for 22-25 minutes, or until the edges are set and slightly pulling away from the sides.
  8. Prepare the frosting by beating together softened cream cheese, softened butter, powdered sugar, vanilla extract, and heavy cream until silky.
  9. Once brownies have cooled completely, spread the cream cheese frosting evenly over the top.
