Ingredients:
- 1 cup warm water
- 1 tbsp sugar
- 2 1/4 tsp active dry yeast
- 2 1/2 cups bread flour
- 1 tsp salt
- 2 tbsp olive oil
- 6 tbsp vegetable oil
- 1 1/2 cups pizza sauce
- 1 lb mozzarella cheese, shredded
- 6 oz pepperoni, sliced thin
Instructions:
- Stir the sugar and yeast into warm water and let sit for 5 minutes until foamy.
- Mix in the olive oil, then gradually stir in the bread flour and salt.
- Knead the dough by hand for 3–5 minutes until smooth.
- Cover the bowl and let the dough rest in a warm spot for 15–20 minutes.
- Pour 1 tbsp of vegetable oil into each of six 6-inch pans, coating the sides.
- Divide dough into 6 equal portions, place one in each pan, and press outward toward the edges and slightly up the sides to create a rim.
- Spread 2–3 tbsp of sauce evenly over the dough, then top with mozzarella and pepperoni.
- Bake on the lowest oven rack at 425°F (218°C) for 12–15 minutes until cheese is bubbling and edges are deep mahogany gold.
- Optional: Place pan over a stove burner on medium heat for 60 seconds for a final crisp on the bottom.
