Ingredients:

  • 1 cup warm water
  • 1 tbsp sugar
  • 2 1/4 tsp active dry yeast
  • 2 1/2 cups bread flour
  • 1 tsp salt
  • 2 tbsp olive oil
  • 6 tbsp vegetable oil
  • 1 1/2 cups pizza sauce
  • 1 lb mozzarella cheese, shredded
  • 6 oz pepperoni, sliced thin

Instructions:

  1. Stir the sugar and yeast into warm water and let sit for 5 minutes until foamy.
  2. Mix in the olive oil, then gradually stir in the bread flour and salt.
  3. Knead the dough by hand for 3–5 minutes until smooth.
  4. Cover the bowl and let the dough rest in a warm spot for 15–20 minutes.
  5. Pour 1 tbsp of vegetable oil into each of six 6-inch pans, coating the sides.
  6. Divide dough into 6 equal portions, place one in each pan, and press outward toward the edges and slightly up the sides to create a rim.
  7. Spread 2–3 tbsp of sauce evenly over the dough, then top with mozzarella and pepperoni.
  8. Bake on the lowest oven rack at 425°F (218°C) for 12–15 minutes until cheese is bubbling and edges are deep mahogany gold.
  9. Optional: Place pan over a stove burner on medium heat for 60 seconds for a final crisp on the bottom.
