Ingredients:
- 100g granulated sugar
- 120ml water
- 180ml lemon juice
- 850g watermelon, cubed and chilled
- 15g fresh mint leaves, packed
- 1g salt
- 1 lemon, thinly sliced
- 10g fresh mint sprigs
- 150g watermelon spheres or small cubes
Instructions:
- Combine the sugar and water in a small saucepan over medium heat. Stir constantly until the sugar dissolves and the liquid becomes clear. Remove from heat and stir in the fresh lemon juice. Let cool slightly.
- Place the chilled watermelon cubes, fresh mint leaves, and a pinch of salt into a high-speed blender. Blend on high until completely liquefied. Pour the puree through a fine-mesh strainer into a bowl, pressing the solids to extract all juice.
- Pour the strained watermelon-mint juice into a large pitcher. Stir in the prepared citrus syrup vigorously until the color is uniform.
- Pour into glasses and garnish with lemon slices, mint sprigs, and watermelon spheres.
