Ingredients:

  • 100g granulated sugar
  • 120ml water
  • 180ml lemon juice
  • 850g watermelon, cubed and chilled
  • 15g fresh mint leaves, packed
  • 1g salt
  • 1 lemon, thinly sliced
  • 10g fresh mint sprigs
  • 150g watermelon spheres or small cubes

Instructions:

  1. Combine the sugar and water in a small saucepan over medium heat. Stir constantly until the sugar dissolves and the liquid becomes clear. Remove from heat and stir in the fresh lemon juice. Let cool slightly.
  2. Place the chilled watermelon cubes, fresh mint leaves, and a pinch of salt into a high-speed blender. Blend on high until completely liquefied. Pour the puree through a fine-mesh strainer into a bowl, pressing the solids to extract all juice.
  3. Pour the strained watermelon-mint juice into a large pitcher. Stir in the prepared citrus syrup vigorously until the color is uniform.
  4. Pour into glasses and garnish with lemon slices, mint sprigs, and watermelon spheres.
