Ingredients:
- 250g gummy bears
- 500ml zero-sugar lemon-lime soda
- 0.5 tsp citric acid
- 1 tbsp fresh lime juice
- 1 pinch sea salt
Instructions:
- Place gummy bears in a single layer at the bottom of a shallow glass airtight container.
- Pour the zero-sugar lemon-lime soda over the bears until they are completely submerged with at least half an inch of liquid above them.
- Cover the container tightly and place in the refrigerator to soak for 4 to 8 hours until the bears have doubled in size and become translucent.
- Strain the expanded gummy bears through a fine-mesh strainer to remove excess liquid.
- Toss the hydrated bears with fresh lime juice, sea salt, and optional citric acid for a sour finish.
- Line a large baking sheet with parchment paper and spread the bears out in a single layer so they are not touching.
- Place the tray in the freezer for a minimum of 3 hours until the bears achieve a brittle, shattering texture.
