Ingredients:

  • 1 cup (200g) Medjool dates, pitted
  • 1/2 cup (120ml) full-fat coconut milk
  • 1 tsp (5ml) pure vanilla extract
  • 1/4 tsp (1.5g) fine sea salt
  • 2-4 tbsp (30-60ml) boiling water

Instructions:

  1. Place pitted dates in a bowl and cover with boiling water. Let them sit for 10 minutes to soften the skins, then drain well.
  2. Combine the soaked dates, coconut milk, vanilla extract, and sea salt in a high-speed blender or food processor. Process on high for 60–90 seconds, scraping down the sides once, until the mixture is a uniform mahogany-colored cream.
  3. Optional: Pour the blended paste into a small saucepan over low-medium heat. Stir constantly for 3–5 minutes until the sauce is glossy and pourable. Remove from heat immediately.
