Ingredients:
- 1 cup (200g) Medjool dates, pitted
- 1/2 cup (120ml) full-fat coconut milk
- 1 tsp (5ml) pure vanilla extract
- 1/4 tsp (1.5g) fine sea salt
- 2-4 tbsp (30-60ml) boiling water
Instructions:
- Place pitted dates in a bowl and cover with boiling water. Let them sit for 10 minutes to soften the skins, then drain well.
- Combine the soaked dates, coconut milk, vanilla extract, and sea salt in a high-speed blender or food processor. Process on high for 60–90 seconds, scraping down the sides once, until the mixture is a uniform mahogany-colored cream.
- Optional: Pour the blended paste into a small saucepan over low-medium heat. Stir constantly for 3–5 minutes until the sauce is glossy and pourable. Remove from heat immediately.
