Ingredients:
- 1 lb ground turkey
- 1/2 cup carrots, finely grated
- 1/2 cup zucchini, finely grated and squeezed dry
- 1/4 cup yellow onion, finely grated
- 1 large egg, beaten
- 1/2 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Grate the carrots, zucchini, and onion using the smallest holes of your grater. Place the grated zucchini in a paper towel and squeeze out excess water to prevent the mixture from becoming too wet to shape.
- In a large bowl, combine the ground turkey, grated veggies, egg, breadcrumbs, cheese, and seasonings. Mix with your hands or a fork just until combined; do not overwork the meat.
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Using a small scoop or your hands, roll the mixture into 1-inch (2.5cm) balls and space them evenly on the sheet.
- Bake for 15–20 minutes until the edges are mahogany-colored and the centers reach an internal temperature of 165°F (74°C).
