Ingredients:

  • 1 cup (240ml) freshly squeezed lemon juice
  • 1/2 cup (120ml) honey
  • 1/4 tsp (1.5g) fine sea salt
  • 4 cups (960ml) chilled sparkling water
  • 2 cups (480ml) ice cubes
  • 1 lemon, thinly sliced into rounds
  • 4-6 sprigs of fresh mint leaves

Instructions:

  1. Roll your lemons on the counter with firm pressure to loosen the juices. Juice them until you reach exactly 1 cup (240ml). Strain out any large pulp pieces for a velvety finish.
  2. In the pitcher, combine the lemon juice, honey, and a pinch of salt. Stir vigorously until the sweetener is completely dissolved and the mixture looks uniform and glossy.
  3. Fill four glasses to the brim with ice. Pour the lemon base evenly across the glasses.
  4. Slowly top each glass with chilled sparkling water. Use a long spoon to give a single, gentle stir to lift the syrup from the bottom without popping the bubbles.
  5. Garnish with a lemon slice and a slapped mint sprig for an aromatic finish.
