Ingredients:

  • 2 cups (150g) fresh blueberries
  • 2 tbsp (15g) fresh ginger, peeled and thinly sliced
  • 1/3 cup (80ml) maple syrup
  • 1/2 cup (120ml) water
  • 1 tbsp (15ml) fresh lemon juice
  • 1 cup (240ml) fresh lemon juice, strained
  • 3 cups (710ml) chilled sparkling water
  • 1/4 cup (35g) fresh blueberries
  • 1 lemon, sliced into thin wheels
  • 4-6 fresh mint leaves per glass

Instructions:

  1. Combine the 2 cups of blueberries, sliced ginger, maple syrup, water, and 1 tbsp of lemon juice in a small saucepan over medium heat.
  2. Bring the mixture to a gentle simmer for 10–12 minutes, lightly mashing some of the berries with a spoon to release their juices until the liquid is a deep purple.
  3. Remove from heat and pour the mixture through a fine-mesh strainer into a glass jar, pressing firmly on the solids to extract all the syrup. Discard the solids.
  4. Allow the syrup to cool to room temperature, then refrigerate for at least 1 hour.
  5. To assemble, divide the chilled blueberry-ginger syrup and the 1 cup of strained lemon juice evenly among four tall glasses.
  6. Top each glass with chilled sparkling water, stirring gently to combine without losing carbonation.
  7. Garnish each drink with fresh blueberries, a lemon wheel, and a sprig of fresh mint.
