Ingredients:

  • 3 lb beef chuck roast
  • 2 tbsp vegetable oil
  • 1 tbsp kosher salt
  • 1 tsp coarsely ground black pepper
  • 1 packet (30g) slow cooker pot roast with onion soup mix
  • 1 cup low-sodium beef broth
  • 1 lb baby potatoes, halved
  • 4 large carrots, cut into 2-inch chunks
  • 1 large yellow onion, wedged

Instructions:

  1. Pat the beef roast dry with paper towels and generously rub both sides with salt and pepper.
  2. Heat oil in a skillet over high heat until it begins to shimmer. Add the roast and sear for 4–6 minutes per side until a deep, mahogany-colored crust forms on all sides.
  3. Place the halved potatoes, carrots, and onion wedges at the bottom of the slow cooker.
  4. Set the seared roast directly on top of the vegetables to create a heat shield.
