Ingredients:
- 3 lb beef chuck roast
- 2 tbsp vegetable oil
- 1 tbsp kosher salt
- 1 tsp coarsely ground black pepper
- 1 packet (30g) slow cooker pot roast with onion soup mix
- 1 cup low-sodium beef broth
- 1 lb baby potatoes, halved
- 4 large carrots, cut into 2-inch chunks
- 1 large yellow onion, wedged
Instructions:
- Pat the beef roast dry with paper towels and generously rub both sides with salt and pepper.
- Heat oil in a skillet over high heat until it begins to shimmer. Add the roast and sear for 4–6 minutes per side until a deep, mahogany-colored crust forms on all sides.
- Place the halved potatoes, carrots, and onion wedges at the bottom of the slow cooker.
- Set the seared roast directly on top of the vegetables to create a heat shield.
