Ingredients:

  • 1 cup (150g) pitted Medjool dates, packed
  • 1 cup (90g) rolled oats
  • 1/4 cup (60g) almond butter
  • 2 tbsp (15g) unsweetened cocoa powder
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1.5g) sea salt
  • 2 tbsp (30g) dark chocolate chips
  • 1 tbsp (8g) chia seeds

Instructions:

  1. Place the pitted Medjool dates into the food processor. Pulse in short bursts, then blend on high for 30–60 seconds until the dates form a thick, sticky ball that pulls away from the sides of the bowl.
  2. Add the almond butter, cocoa powder, vanilla extract, and salt to the processor. Blend until the mixture is a uniform, dark brown color and looks velvety.
  3. Transfer the paste to a mixing bowl. Stir in the rolled oats using a spatula until a thick, dough-like consistency forms.
  4. Fold in the dark chocolate chips and chia seeds gently so they remain whole.
  5. Scoop about 1 tablespoon of dough and roll it between your palms to create a smooth, round ball. Place each ball on a parchment-lined baking sheet.
