Ingredients:

  • 12 large Medjool dates, pitted (approx. 12 oz / 340g)
  • 1/4 cup creamy sunflower seed butter or pumpkin seed butter
  • 1 tbsp melted coconut oil
  • 1/4 tsp fine sea salt
  • 1 tsp flaky sea salt
  • 2 tbsp toasted sesame seeds or hemp hearts

Instructions:

  1. Carefully slice each Medjool date lengthwise to create a pocket, being careful not to cut all the way through. If dates are firm, steam them for 30 seconds in the microwave wrapped in a damp paper towel.
  2. Spoon approximately 1 teaspoon of seed butter into the center of each date, pressing firmly into the cavity to ensure no air gaps.
  3. Sprinkle a tiny pinch of flaky sea salt over the exposed butter and top with toasted sesame seeds or hemp hearts, pressing gently to adhere.
