Ingredients:
- 12 large Medjool dates, pitted
- 1/4 cup creamy almond butter
- 1/2 cup dark chocolate chips
- 1 tsp coconut oil
- 1/2 tsp flaky sea salt
Instructions:
- Carefully slice the length of each Medjool date to remove the pit. Using a small spoon or piping bag, fill each date with approximately 1 tsp of almond butter and press the dates slightly closed.
- Combine dark chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until the mixture is glossy and completely smooth.
- Using a fork, dip each stuffed date into the chocolate, rotating for a full coating, then tap the fork gently against the bowl to remove excess chocolate.
- Place the coated dates onto a parchment-lined tray, sprinkle a tiny pinch of flaky sea salt over the top, and refrigerate for 20 minutes until the shell is firm.
