Ingredients:
- 16 large Medjool dates, pitted
- 4 oz plain goat cheese, softened
- 1 tbsp heavy cream
- 1/2 tsp lemon juice
- 1/2 cup walnuts, toasted and roughly chopped
- 2 tbsp honey
- 1 pinch flaky sea salt
- 1 tsp fresh thyme leaves
Instructions:
- Using a paring knife, make a longitudinal slit in each date and gently remove the pit if not pre-pitted.
- In a small bowl, whisk the softened goat cheese, heavy cream, and lemon juice until smooth, then transfer the mixture into a piping bag.
- Pipe the goat cheese into each date cavity until flush with the top.
- Press a toasted walnut piece firmly into the cheese filling of each date.
- Drizzle with honey and finish with a sprinkle of fresh thyme and flaky sea salt.
