Ingredients:

  • 16 large Medjool dates, pitted
  • 4 oz plain goat cheese, softened
  • 1 tbsp heavy cream
  • 1/2 tsp lemon juice
  • 1/2 cup walnuts, toasted and roughly chopped
  • 2 tbsp honey
  • 1 pinch flaky sea salt
  • 1 tsp fresh thyme leaves

Instructions:

  1. Using a paring knife, make a longitudinal slit in each date and gently remove the pit if not pre-pitted.
  2. In a small bowl, whisk the softened goat cheese, heavy cream, and lemon juice until smooth, then transfer the mixture into a piping bag.
  3. Pipe the goat cheese into each date cavity until flush with the top.
  4. Press a toasted walnut piece firmly into the cheese filling of each date.
  5. Drizzle with honey and finish with a sprinkle of fresh thyme and flaky sea salt.
