Ingredients:
- 2 cups (250g) all-purpose flour
- 3 large (150ml) eggs
- 1/2 tsp (3g) fine sea salt
- 1 tbsp (15ml) extra virgin olive oil
- 15 oz (425g) whole milk ricotta cheese, drained
- 10 oz (280g) fresh baby spinach
- 1/2 cup (50g) grated Parmesan cheese
- 1 pinch (1g) ground nutmeg
- 2 cloves (6g) garlic, minced
Instructions:
- Mound the flour on a clean surface and create a wide well in the center.
- Pour the eggs, olive oil, and salt into the well. Using a fork, whisk the eggs gently, gradually incorporating flour from the inner walls.
- Once a shaggy dough forms, knead by hand for 8-10 minutes until the texture is smooth and elastic.
- Wrap the dough tightly in plastic wrap and let it rest at room temperature for 30 minutes to relax the gluten.
- Sauté minced garlic in a pan, add spinach, and cook until just wilted.
- Place the cooked spinach in a fine-mesh strainer and press firmly with a spoon to remove all excess liquid, then finely chop the spinach.
- In a medium bowl, combine the drained ricotta, chopped spinach, Parmesan, and nutmeg. Season with salt and pepper and mix until cohesive.
