Ingredients:

  • 9 large Medjool dates (approx. 200g)
  • 3 tbsp natural creamy peanut butter (45g)
  • 9 roasted salted peanuts
  • 1/2 cup dark chocolate chips (90g)
  • 1 tsp coconut oil (5ml)
  • 1/2 tsp flaky sea salt (3g)

Instructions:

  1. Carefully slice each date lengthwise to remove the pit and gently press the edges with your thumb to create a small, hollow cavity.
  2. Spoon approximately 1 teaspoon of peanut butter into each date cavity and press one whole roasted salted peanut into the center.
  3. Combine dark chocolate and coconut oil in a microwave-safe bowl. Heat in 30-second bursts, stirring between each, until smooth.
  4. Submerge each stuffed date into the melted chocolate using a fork, tapping the fork on the edge of the bowl to remove excess.
  5. Place coated dates on parchment paper, sprinkle immediately with flaky sea salt, and freeze for 20–30 minutes until firm.
