Ingredients:
- 9 large Medjool dates (approx. 200g)
- 3 tbsp natural creamy peanut butter (45g)
- 9 roasted salted peanuts
- 1/2 cup dark chocolate chips (90g)
- 1 tsp coconut oil (5ml)
- 1/2 tsp flaky sea salt (3g)
Instructions:
- Carefully slice each date lengthwise to remove the pit and gently press the edges with your thumb to create a small, hollow cavity.
- Spoon approximately 1 teaspoon of peanut butter into each date cavity and press one whole roasted salted peanut into the center.
- Combine dark chocolate and coconut oil in a microwave-safe bowl. Heat in 30-second bursts, stirring between each, until smooth.
- Submerge each stuffed date into the melted chocolate using a fork, tapping the fork on the edge of the bowl to remove excess.
- Place coated dates on parchment paper, sprinkle immediately with flaky sea salt, and freeze for 20–30 minutes until firm.
