Ingredients:

  • 1 cup (200g) Medjool dates, pitted
  • 1/2 cup (125g) creamy peanut butter
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1.5g) sea salt
  • 2 tbsp (20g) chia seeds
  • 2 tbsp (15g) almond flour
  • 2 tbsp (10g) unsweetened cocoa powder

Instructions:

  1. Place pitted dates into the food processor. Pulse in 5-second bursts until the dates break down from chunks into a thick, sticky paste. If the dates feel dry, soak them in warm water for 10 minutes and drain thoroughly before pulsing.
  2. Add the peanut butter, vanilla extract, sea salt, and chia seeds. Process until the mixture is completely homogenous and the dough pulls away from the sides of the bowl.
  3. Scoop approximately 1 tbsp (15g) of dough and roll it between your palms until it forms a smooth, spherical shape. Immediately roll the ball in cocoa powder until evenly coated.
  4. Place the finished balls on a parchment-lined tray. Chill in the refrigerator for at least 60 minutes to lock in the shape and develop a firmer, fudge-like texture.
