Ingredients:
- 1 cup (200g) Medjool dates, pitted
- 1/2 cup (125g) creamy peanut butter
- 1 tsp (5ml) vanilla extract
- 1/4 tsp (1.5g) sea salt
- 2 tbsp (20g) chia seeds
- 2 tbsp (15g) almond flour
- 2 tbsp (10g) unsweetened cocoa powder
Instructions:
- Place pitted dates into the food processor. Pulse in 5-second bursts until the dates break down from chunks into a thick, sticky paste. If the dates feel dry, soak them in warm water for 10 minutes and drain thoroughly before pulsing.
- Add the peanut butter, vanilla extract, sea salt, and chia seeds. Process until the mixture is completely homogenous and the dough pulls away from the sides of the bowl.
- Scoop approximately 1 tbsp (15g) of dough and roll it between your palms until it forms a smooth, spherical shape. Immediately roll the ball in cocoa powder until evenly coated.
- Place the finished balls on a parchment-lined tray. Chill in the refrigerator for at least 60 minutes to lock in the shape and develop a firmer, fudge-like texture.
