Ingredients:

  • 1 cup (150g) Medjool dates, pitted
  • 1/2 cup (65g) raw cashews
  • 2 tbsp (30ml) coconut oil, melted
  • 1 tsp (5ml) vanilla extract
  • 1g sea salt
  • 1/2 cup (50g) unsweetened shredded coconut

Instructions:

  1. Place the pitted dates, raw nuts, melted coconut oil, vanilla, and salt into a food processor.
  2. Pulse in short bursts to break down the nuts, then blend on high until the mixture forms a thick, tacky paste that clumps together.
  3. Scoop approximately 1 tablespoon of the mixture and roll between your palms to form a 1-inch sphere.
  4. Roll each ball gently in a bowl of unsweetened shredded coconut until completely coated.
  5. Place the finished balls on a baking sheet.
