Ingredients:
- 1.5 cups (225g) pitted Medjool dates
- 0.5 cup (120ml) full-fat coconut milk
- 1 tsp (5ml) pure vanilla extract
- 0.25 tsp (1.5g) sea salt
Instructions:
- If Medjool dates feel firm or dry, place them in a bowl of boiling water for 10 to 15 minutes, then drain the water thoroughly.
- Combine the pitted dates, coconut milk, vanilla extract, and sea salt in a high-speed blender.
- Start blending on a low setting to break up the fruit, then increase to high for 60–90 seconds until the mixture is completely smooth and the color is uniform.
- Check for any remaining date fragments. If the sauce is too thick to pour, add coconut milk one tablespoon at a time while pulsing until it reaches a velvety, ribbon-like consistency.
