Ingredients:

  • 1.5 cups (225g) pitted Medjool dates
  • 0.5 cup (120ml) full-fat coconut milk
  • 1 tsp (5ml) pure vanilla extract
  • 0.25 tsp (1.5g) sea salt

Instructions:

  1. If Medjool dates feel firm or dry, place them in a bowl of boiling water for 10 to 15 minutes, then drain the water thoroughly.
  2. Combine the pitted dates, coconut milk, vanilla extract, and sea salt in a high-speed blender.
  3. Start blending on a low setting to break up the fruit, then increase to high for 60–90 seconds until the mixture is completely smooth and the color is uniform.
  4. Check for any remaining date fragments. If the sauce is too thick to pour, add coconut milk one tablespoon at a time while pulsing until it reaches a velvety, ribbon-like consistency.
