Ingredients:
- 1 lb lean ground beef
- 2 tbsp olive oil
- 3 tbsp taco seasoning
- 1/4 cup water
- 12 oz sturdy, thick-cut tortilla chips
- 1 cup canned refried beans
- 2 cups shredded Colby Jack cheese
- 2 cups shredded iceberg lettuce
- 1 cup diced roma tomatoes
- 1/2 cup sour cream
Instructions:
- Heat olive oil in a skillet over medium high heat. Add the ground beef, breaking it apart with a spatula until browned and sizzling. Note: Don't stir too often; let the meat sear for a bit.
- Stir in the taco seasoning and water. Simmer for 3–5 minutes until the liquid reduces into a thick glaze.
- Line a large rimmed baking sheet with parchment paper and spread tortilla chips in a single layer.
- Dollop a small amount of refried beans onto each chip and spread slightly to create a moisture seal. Note: This is the most important step for the crunch!
- Top each bean coated chip with a spoonful of the seasoned beef.
- Sprinkle shredded Colby Jack cheese evenly over the top.
- Place the pan under the oven broiler for 2–3 minutes until the cheese is bubbling and golden brown.
- Remove from the oven and immediately top with shredded lettuce, diced tomatoes, and sour cream.
