Ingredients:

  • 1 lb (450g) Medjool dates, pitted
  • ½ cup (120ml) boiling water
  • ¼ tsp (1.5g) fine sea salt

Instructions:

  1. Remove all pits from the Medjool dates. If the dates feel firm or dry, place them in a bowl and cover them with boiling water for 10 minutes to soften. Drain the dates, reserving the soaking liquid for the next step.
  2. Transfer the pitted dates to the food processor. Pulse 5-7 times to break the dates into small fragments.
  3. Add the boiling water (or reserved soaking liquid) ¼ cup at a time while processing on high.
  4. Use a silicone spatula to scrape down the sides of the bowl every 30 seconds.
  5. Continue blending for 1-2 minutes until the mixture reaches a velvety, smooth consistency.
