Ingredients:
- 1 lb (450g) Medjool dates, pitted
- ½ cup (120ml) boiling water
- ¼ tsp (1.5g) fine sea salt
Instructions:
- Remove all pits from the Medjool dates. If the dates feel firm or dry, place them in a bowl and cover them with boiling water for 10 minutes to soften. Drain the dates, reserving the soaking liquid for the next step.
- Transfer the pitted dates to the food processor. Pulse 5-7 times to break the dates into small fragments.
- Add the boiling water (or reserved soaking liquid) ¼ cup at a time while processing on high.
- Use a silicone spatula to scrape down the sides of the bowl every 30 seconds.
- Continue blending for 1-2 minutes until the mixture reaches a velvety, smooth consistency.
