Ingredients:
- 1 cup (200g) granulated sugar
- 1 cup (240ml) water
- 1 cup (240ml) freshly squeezed lemon juice
- 3 cups (710ml) cold water
- 1 pinch (1g) fine sea salt
Instructions:
- Combine the sugar and 1 cup of water in a small saucepan. Place over medium heat and stir occasionally until the liquid becomes completely clear and the sugar is fully dissolved, then remove from heat immediately.
- Roll lemons on the counter with firm pressure to loosen the juices. Juice them until you have exactly 1 cup of liquid, straining out any large seeds or excess pulp.
- Pour the lemon juice, cold water, and pinch of salt into a pitcher. Slowly whisk in the warm simple syrup and stir vigorously for 30 seconds to ensure the liquids are fully homogenized.
