Ingredients:

  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) water
  • 1 cup (240ml) freshly squeezed lemon juice
  • 3 cups (710ml) cold water
  • 1 pinch (1g) fine sea salt

Instructions:

  1. Combine the sugar and 1 cup of water in a small saucepan. Place over medium heat and stir occasionally until the liquid becomes completely clear and the sugar is fully dissolved, then remove from heat immediately.
  2. Roll lemons on the counter with firm pressure to loosen the juices. Juice them until you have exactly 1 cup of liquid, straining out any large seeds or excess pulp.
  3. Pour the lemon juice, cold water, and pinch of salt into a pitcher. Slowly whisk in the warm simple syrup and stir vigorously for 30 seconds to ensure the liquids are fully homogenized.
