Ingredients:
- 2 cups (250g) all-purpose flour
- 3 large (150g) eggs
- 1/2 tsp (3g) fine sea salt
- 1 tbsp (15ml) extra virgin olive oil
- 15 oz (425g) part-skim ricotta cheese, drained
- 1/2 cup (50g) grated Parmesan cheese
- 1/4 cup (15g) fresh parsley, finely minced
- 2 tbsp (8g) fresh basil, finely minced
- 1 tbsp (8g) fresh chives, finely minced
- 1 tsp (2g) lemon zest, finely grated
- 1/4 tsp (1g) ground nutmeg
- 1/2 tsp (3g) kosher salt
- 1/4 tsp (1g) cracked black pepper
Instructions:
- Mound the flour on a clean surface and create a well in the center. Pour in the eggs, salt, and oil.
- Using a fork, gently whisk the eggs while gradually incorporating flour from the edges.
- Once a shaggy mass forms, knead by hand for 8–10 minutes until the dough feels smooth, elastic, and bounces back when poked.
- Wrap the dough in plastic and let it rest for 30 minutes.
- In a medium bowl, combine the drained ricotta, Parmesan, and minced herbs.
- Stir in the lemon zest, nutmeg, salt, and pepper until the filling is uniform and thick.
- Roll the dough into thin sheets, place dollops of filling, and seal and cut into ravioli.
- Cook in boiling water for approximately 5 minutes until they float to the surface.
