Ingredients:

  • 12 to 15 Medjool dates, pitted
  • 1 tbsp extra virgin olive oil
  • 1/4 cup low-fat goat cheese
  • 1 tbsp fresh rosemary, finely minced
  • 1 pinch sea salt
  • 1/4 tsp freshly cracked black pepper
  • 2 tbsp raw walnuts, crushed
  • 1 tsp fresh rosemary leaves, whole

Instructions:

  1. Slice each date lengthwise to create a pocket, being careful not to cut all the way through. Remove any remaining fragments of the pit.
  2. Combine the goat cheese, minced rosemary, salt, and pepper in a small bowl. Stir until the herbs are evenly distributed.
  3. Spoon approximately 1/2 teaspoon of the herb mixture into each date and press the crushed walnuts firmly into the cheese.
  4. Preheat oven to 400°F (200°C). Arrange the dates on a parchment-lined sheet, drizzle with olive oil, and roast for 8–10 minutes until plump and cheese is softened.
  5. Remove from heat and garnish with whole rosemary leaves while still warm.
