Ingredients:

  • 2 cups (300g) pitted Medjool dates
  • 1 cup (125g) raw almonds
  • 1/2 cup (45g) unsweetened shredded coconut
  • 1 tsp (2g) ground cinnamon
  • 1/4 tsp (1g) ground clove
  • 1/2 tsp (3g) sea salt
  • 1 tsp (5ml) pure vanilla extract
  • 2 tbsp (15g) unsweetened cocoa powder
  • 2 tbsp (15g) shredded coconut

Instructions:

  1. Place the almonds in the food processor and pulse until they are coarsely ground, ensuring they do not turn into nut butter.
  2. Add the pitted dates, cinnamon, clove, salt, and vanilla to the processor. Process on high until the mixture transforms into a dense, sticky dough that clumps together.
  3. Scoop approximately 1 tablespoon of the mixture and roll the dough between your palms into a firm, 1-inch sphere.
  4. Immediately roll each ball in cocoa powder, shredded coconut, or sesame seeds until evenly covered.
  5. Place the finished balls on a parchment-lined baking sheet to firm up.
