Ingredients:
- 2 cups (300g) pitted Medjool dates
- 1 cup (125g) raw almonds
- 1/2 cup (45g) unsweetened shredded coconut
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1g) ground clove
- 1/2 tsp (3g) sea salt
- 1 tsp (5ml) pure vanilla extract
- 2 tbsp (15g) unsweetened cocoa powder
- 2 tbsp (15g) shredded coconut
Instructions:
- Place the almonds in the food processor and pulse until they are coarsely ground, ensuring they do not turn into nut butter.
- Add the pitted dates, cinnamon, clove, salt, and vanilla to the processor. Process on high until the mixture transforms into a dense, sticky dough that clumps together.
- Scoop approximately 1 tablespoon of the mixture and roll the dough between your palms into a firm, 1-inch sphere.
- Immediately roll each ball in cocoa powder, shredded coconut, or sesame seeds until evenly covered.
- Place the finished balls on a parchment-lined baking sheet to firm up.
