Ingredients:

  • 1 cup water
  • 1/3 cup honey
  • 2 tbsp fresh ginger, peeled and finely grated
  • 1 cup fresh lemon juice
  • 1/2 cup cold filtered water
  • 1/4 tsp sea salt
  • 15 fresh mint leaves
  • 1 lemon, thinly sliced into rounds
  • Ice cubes

Instructions:

  1. Combine the water, honey, and grated ginger in a small saucepan. Bring to a gentle simmer over medium heat for 3-5 minutes, ensuring it does not reach a rolling boil. Remove from heat and let cool for 5 minutes.
  2. Place the fresh mint leaves in the palm of your hand and give them one firm slap to release the oils. Drop the mint into the bottom of a large glass pitcher along with the fresh lemon juice.
  3. Pour the warm ginger-honey infusion through a fine-mesh strainer into the pitcher to remove the ginger pulp. Stir in the cold filtered water and sea salt vigorously until the honey is fully integrated.
  4. Fill glasses to the brim with ice. Pour the lemonade over the ice and garnish each glass with a few mint leaves and a lemon slice.
