Ingredients:
- 1 cup water
- 1/3 cup honey
- 2 tbsp fresh ginger, peeled and finely grated
- 1 cup fresh lemon juice
- 1/2 cup cold filtered water
- 1/4 tsp sea salt
- 15 fresh mint leaves
- 1 lemon, thinly sliced into rounds
- Ice cubes
Instructions:
- Combine the water, honey, and grated ginger in a small saucepan. Bring to a gentle simmer over medium heat for 3-5 minutes, ensuring it does not reach a rolling boil. Remove from heat and let cool for 5 minutes.
- Place the fresh mint leaves in the palm of your hand and give them one firm slap to release the oils. Drop the mint into the bottom of a large glass pitcher along with the fresh lemon juice.
- Pour the warm ginger-honey infusion through a fine-mesh strainer into the pitcher to remove the ginger pulp. Stir in the cold filtered water and sea salt vigorously until the honey is fully integrated.
- Fill glasses to the brim with ice. Pour the lemonade over the ice and garnish each glass with a few mint leaves and a lemon slice.
