Ingredients:

  • 3 cups (450g) frozen strawberries
  • 1/2 cup (120ml) freshly squeezed lemon juice
  • 1 tsp (2g) lemon zest
  • 1 tbsp (15ml) cold water
  • 1/4 cup (80ml) honey
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. Zest one lemon into a small bowl, then juice the lemon until you have exactly 1/2 cup (120ml).
  2. Add the lemon juice, honey, vanilla extract, and lemon zest to the blender first to ensure the sweetener is fully incorporated.
  3. Top the mixture with the frozen strawberries.
  4. Pulse 5-7 times to break up the large chunks, then blend on high for 45-60 seconds until the mixture looks velvety and uniform.
  5. Check the consistency; if the mixture is too thick to move, add 1 tbsp (15ml) of cold water and blend for another 10 seconds.
