Ingredients:
- 3 cups (450g) frozen strawberries
- 1/2 cup (120ml) freshly squeezed lemon juice
- 1 tsp (2g) lemon zest
- 1 tbsp (15ml) cold water
- 1/4 cup (80ml) honey
- 1 tsp (5ml) vanilla extract
Instructions:
- Zest one lemon into a small bowl, then juice the lemon until you have exactly 1/2 cup (120ml).
- Add the lemon juice, honey, vanilla extract, and lemon zest to the blender first to ensure the sweetener is fully incorporated.
- Top the mixture with the frozen strawberries.
- Pulse 5-7 times to break up the large chunks, then blend on high for 45-60 seconds until the mixture looks velvety and uniform.
- Check the consistency; if the mixture is too thick to move, add 1 tbsp (15ml) of cold water and blend for another 10 seconds.
