Ingredients:

  • 2 cups (300g) fresh peaches, peeled and diced
  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) water
  • 1 tbsp (15ml) fresh lemon juice
  • 1 cup (240ml) freshly squeezed lemon juice
  • 4 cups (960ml) cold filtered water
  • 1 pinch (1g) sea salt

Instructions:

  1. Combine the diced peaches, sugar, and 1 cup of water in a saucepan over medium heat. Bring to a gentle simmer, stirring occasionally, for 10–15 minutes until peaches are soft and the liquid is golden.
  2. Remove the pot from the heat and stir in 1 tablespoon of lemon juice.
  3. Press the mixture through a fine-mesh strainer into a bowl, discarding the solids to create a concentrated peach essence.
  4. In a large pitcher, whisk together the fresh lemon juice, cold filtered water, and a pinch of salt.
  5. Slowly pour in the cooled peach syrup and stir until fully integrated.
