Ingredients:

  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) water
  • 1 cup (30g) fresh mint leaves, packed
  • 1 cup (240ml) fresh lemon juice
  • 4 cups (960ml) cold filtered water
  • 1/2 tsp (3g) salt
  • 1 lemon, thinly sliced into rounds
  • 6 sprigs of fresh mint
  • Ice cubes

Instructions:

  1. Combine the sugar and water in a small saucepan over medium heat. Stir constantly until the sugar is completely dissolved and the liquid is clear.
  2. Remove from heat immediately and stir in the fresh mint leaves. Cover the pan and let the mint steep for 15–20 minutes.
  3. Pour the syrup through a fine-mesh strainer into a bowl, discarding the spent leaves.
  4. Roll lemons firmly on the counter with your palm to break the internal membranes, then juice them to obtain exactly 1 cup of liquid, ensuring no seeds are present.
  5. Pour the cooled mint syrup into a large pitcher. Stir in the fresh lemon juice, cold filtered water, and salt until fully integrated.
  6. Cover the pitcher and refrigerate for at least 2 hours to allow the flavors to marry.
  7. Give the mixture a final stir and pour over ice-filled glasses, garnishing with lemon slices and mint sprigs.
