Ingredients:
- 1 cup (200g) granulated sugar
- 1 cup (240ml) water
- 1 cup (30g) fresh mint leaves, packed
- 1 cup (240ml) fresh lemon juice
- 4 cups (960ml) cold filtered water
- 1/2 tsp (3g) salt
- 1 lemon, thinly sliced into rounds
- 6 sprigs of fresh mint
- Ice cubes
Instructions:
- Combine the sugar and water in a small saucepan over medium heat. Stir constantly until the sugar is completely dissolved and the liquid is clear.
- Remove from heat immediately and stir in the fresh mint leaves. Cover the pan and let the mint steep for 15–20 minutes.
- Pour the syrup through a fine-mesh strainer into a bowl, discarding the spent leaves.
- Roll lemons firmly on the counter with your palm to break the internal membranes, then juice them to obtain exactly 1 cup of liquid, ensuring no seeds are present.
- Pour the cooled mint syrup into a large pitcher. Stir in the fresh lemon juice, cold filtered water, and salt until fully integrated.
- Cover the pitcher and refrigerate for at least 2 hours to allow the flavors to marry.
- Give the mixture a final stir and pour over ice-filled glasses, garnishing with lemon slices and mint sprigs.
