Ingredients:

  • 2 cups all-purpose flour

  • 2 tsp baking powder
  • 1 tsp baking soda
  • 0.5 tsp fine sea salt
  • 1.5 cups whole milk
  • 1 large egg
  • 4 tbsp unsalted butter, melted and cooled
  • 1 tsp pure vanilla extract

Instructions:

  1. Place your skillet or cast iron griddle over medium-low heat for a slow preheat. Test the surface with a drop of water; it should dance and evaporate immediately when ready.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and sea salt.
  3. In a separate pitcher or bowl, whisk the egg, milk, vanilla, and melted butter until combined.
  4. Create a well in the center of the dry ingredients. Pour the liquid mixture into the well and whisk gently. Stop immediately when the flour streaks disappear; leave the lumps to ensure air pockets.
  5. Let the batter rest for 5 minutes. Look for small bubbles forming on the surface, indicating the leavening agents are activating.
  6. Pour 1/4 cup of batter onto the lightly greased griddle. Do not flatten. Cook until the edges look matte and set, and bubbles appear and burst on the surface. Flip and cook until golden brown on the bottom.
