Ingredients:

  • 1 cup whole milk
  • 2 tbsp white vinegar
  • 1 large egg, room temperature
  • 2 tbsp unsalted butter, melted and slightly cooled
  • 1 tsp pure vanilla extract
  • 1.5 cups all-purpose flour, leveled
  • 3 tbsp granulated sugar
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp fine sea salt
  • 1 cup fresh blueberries

Instructions:

  1. Combine milk and vinegar. Let it sit for 5 minutes until it looks slightly curdled and thickened.
  2. Whisk dry ingredients. Combine flour, sugar, baking powder, soda, and salt.
  3. Mix wet ingredients. Whisk the egg, melted butter, and vanilla into the milk mixture.
  4. Create a well. Pour the wet into the dry.
  5. Fold gently. Use a spatula to mix until just combined with some small lumps remaining.
  6. Rest the batter. Let it sit for 5 minutes until you see small bubbles appearing on the surface.
  7. Heat the pan. Add a tiny bit of butter or oil to your skillet over medium low heat.
  8. Pour and berry. Drop 1/4 cup of batter into the pan and press 8-10 blueberries into the top.
  9. The first flip. Cook for 2-3 minutes until the surface bubbles stay open and the edges look dry.
  10. The finish. Flip and cook for another 1-2 minutes until the bottom is golden brown and the berries sizzle.
