Ingredients:
- 1 tbsp olive oil
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 can (4 oz) diced green chiles
- 1 tsp ground cumin
- 3 cups shredded cooked chicken
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn kernels
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 2 cups low sodium chicken broth
- 1 can (10 oz) red enchilada sauce
- 4 oz cream cheese, softened and cubed
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
Instructions:
- Heat olive oil over medium heat in a Dutch oven or heavy-bottomed pot. Add diced onion and cook until translucent (about 4-5 minutes).
- Stir in minced garlic, green chiles, and cumin. Toast for 60 seconds until aromatic.
- Stir in red enchilada sauce, chicken broth, diced tomatoes, corn, black beans, and shredded chicken.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes until flavors meld.
- Stir in softened cream cheese, shredded Monterey Jack cheese, and sour cream, stirring until melted and the soup is velvety.
