Ingredients:

  • 1 cup pitted Medjool dates
  • 1/2 cup raw almonds or walnuts
  • 1/2 cup rolled oats
  • 2 tbsp creamy peanut butter or almond butter
  • 1 tbsp unsweetened cocoa powder
  • 1/4 tsp fine sea salt
  • 1 tsp pure vanilla extract
  • 2 tbsp unsweetened shredded coconut or hemp seeds

Instructions:

  1. Add the nuts to the food processor and pulse until they reach a coarse, sandy consistency.
  2. Add the pitted dates, peanut butter, cocoa powder, salt, and vanilla. Blend on high until the mixture forms a thick, sticky ball that pulls away from the sides of the bowl.
  3. Add the rolled oats to the processor and pulse 3–5 times just until the oats are evenly distributed.
  4. Scoop roughly 1 tablespoon of dough and roll it between your palms to create a smooth sphere.
  5. Roll the ball gently in a bowl of shredded coconut until evenly coated and place on a parchment-lined sheet to set.
