Ingredients:
- 1 cup pitted Medjool dates
- 1/2 cup raw almonds or walnuts
- 1/2 cup rolled oats
- 2 tbsp creamy peanut butter or almond butter
- 1 tbsp unsweetened cocoa powder
- 1/4 tsp fine sea salt
- 1 tsp pure vanilla extract
- 2 tbsp unsweetened shredded coconut or hemp seeds
Instructions:
- Add the nuts to the food processor and pulse until they reach a coarse, sandy consistency.
- Add the pitted dates, peanut butter, cocoa powder, salt, and vanilla. Blend on high until the mixture forms a thick, sticky ball that pulls away from the sides of the bowl.
- Add the rolled oats to the processor and pulse 3–5 times just until the oats are evenly distributed.
- Scoop roughly 1 tablespoon of dough and roll it between your palms to create a smooth sphere.
- Roll the ball gently in a bowl of shredded coconut until evenly coated and place on a parchment-lined sheet to set.
