Ingredients:
- 300g Medjool dates, pitted
- 60ml hot water
- 60ml almond butter
- 45g unsweetened cocoa powder
- 115g dark chocolate, melted
- 5ml pure vanilla extract
- 1.5g fine sea salt
Instructions:
- Place the pitted dates in a bowl of hot water for 5-10 minutes to soften, then drain the water.
- Transfer dates to a food processor and blend on high until the mixture forms a smooth, mahogany-colored ball.
- Add the cocoa powder, almond butter, vanilla, and salt to the processor and pulse until fully incorporated.
- Pour in the melted dark chocolate and blend for an additional 30 seconds until glossy.
- Line an 8x4-inch loaf pan with parchment paper and press the fudge firmly into the pan, smoothing the top with a spatula.
- Chill in the refrigerator for at least 1 hour until firm, then lift by the parchment and slice into 25 small squares.
