Ingredients:

  • 300g Medjool dates, pitted
  • 60ml hot water
  • 60ml almond butter
  • 45g unsweetened cocoa powder
  • 115g dark chocolate, melted
  • 5ml pure vanilla extract
  • 1.5g fine sea salt

Instructions:

  1. Place the pitted dates in a bowl of hot water for 5-10 minutes to soften, then drain the water.
  2. Transfer dates to a food processor and blend on high until the mixture forms a smooth, mahogany-colored ball.
  3. Add the cocoa powder, almond butter, vanilla, and salt to the processor and pulse until fully incorporated.
  4. Pour in the melted dark chocolate and blend for an additional 30 seconds until glossy.
  5. Line an 8x4-inch loaf pan with parchment paper and press the fudge firmly into the pan, smoothing the top with a spatula.
  6. Chill in the refrigerator for at least 1 hour until firm, then lift by the parchment and slice into 25 small squares.
