Ingredients:

  • 680g Salmon Fillet
  • 45g Unsalted Butter
  • 3 Cloves Garlic, Minced finely
  • 5g Honey
  • 1 Large Lemon, Half juiced, half sliced into rounds
  • 5g Kosher Salt
  • 2g Cracked Black Pepper
  • 4g Fresh Parsley, Chopped for garnish

Instructions:

  1. Preheat oven. Set your temperature to 200°C (400°F).
  2. Prepare the foil. Place a large piece of heavy duty foil on a baking sheet.
  3. Dry the fish. Pat the 680g salmon fillet with paper towels until the surface is no longer shiny or wet.
  4. Create the sauce. In a small bowl, whisk together 45g melted butter, minced garlic, 5g honey, lemon juice, salt, and pepper.
  5. Position the salmon. Place the fillet in the center of the foil and fold up the edges slightly to prevent the sauce from running off.
  6. Apply flavor. Pour the butter mixture over the fish until every inch is coated in golden liquid.
  7. Add aromatics. Top the fillet with the lemon slices.
  8. Seal the packet. Fold the foil over the salmon and crimp the edges tightly until no steam can escape.
  9. Bake the fish. Slide the tray into the oven and bake for 15 minutes until the thickest part feels firm to the touch.
  10. Garnish and serve. Open the foil carefully to avoid the steam, sprinkle with fresh parsley, and serve immediately.
